Tuna Basque

Ingredients

2 onions, chopped
1 green pepper, seeded and chopped
1 sweet red pepper, seeded and chopped
4 tomatoes, chopped
1 pound brown mushrooms, sliced
2 tablespoons extra virgin olive oil
1 tablespoon tomato paste
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
2 cloves garlic
1/4 teaspoon thyme
1 bay leaf
1/4 teaspoon tarragon
1/4 teaspoon marjoram
3 cans dark tuna, packed in water, drained

Directions:

In a saucepan, sauté the onion, peppers, tomatoes and mushrooms in the olive oil. Add all the seasonings, mix well and simmer uncovered until the vegetables are soft, about 30 minutes. Add the tuna and stir until thoroughly heated.

Serve over brown rice.
