Drain liquid from the salmon. In a bowl place the salmon, onion, breadcrumbs, salt, and pepper and mix well.
Add the liquid egg substitute, liquid from the salmon and the milk. Add the mustard, Old Bay seasoning and cayenne pepper. Mix well and form into six patties and roll in the breadcrumbs. Saute in the oil until brown on both sides.
For tuna croquettes, used 3 5-ounce cans of tuna in place of salmon.
