Cut the fish into 8 pieces and place in a deep bowl. Blend the oil, oregano and pepper and pour over the fish and bay leaves. Marinate at room temperature for 3 hours.
Skewer the fish on one skewer. Skewer the onions, tomatoes and mushroom caps on a second skewer. Broil the vegetables for 10 minutes. Add the fish skewer to the broiler and continue to broil for 7 minutes more.
