Sauté almonds in 1 tablespoon butter. Remove and reserve almonds. Melt remaining butter; add celery, onion, and seasonings. Cook over low heat, stirring occasionally for about 10 minutes. Add almonds and wine. Cook until almonds are reheated. This can be made ahead, except for adding almonds and wine.
