Combine ham hocks and water in a large pot. bring to a boil. Cover and reduce heat to simmer for about one hour or until meat is tender. In the meantime, wash greens thoroughly and drain. Cut into bite-size pieces. Add greens, salt, and pepper (and bell pepper, if desired) to boiled meat. Bring to a boil. Cover; reduce heat and simmer for 1–1 1/2 hours or until greens are tender.
