Sweet Potato St. Cecilia

Ingredients

4 sweet potatoes
1/2 cup butter
1/2 cup sugar
2 teaspoons cinnamon
1/2 cup orange juice
4 oranges
miniature marshmallow

Directions:

Boil sweet potatoes until soft (30 minutes). Cool and peel. Mash potatoes and add butter, sugar, cinnamon, and orange juice. Mix well. Halve the oranges, remove the meat and juice. Stuff each half with sweet potato mixture. Top with marshmallow. Bake at 350° for 15–20 minutes.
