Herbed Broccoli Sandwich

Ingredients

2 cups finely chopped broccoli
1/2 cup finely chopped onion
2 tablespoons oil
a few dashes each: dried basil, thyme, and pepper
1/2 teaspoon salt
4 - 6 slices French bread
3/4 cup shredded Cheddar cheese

Directions:

In large frying pan, sauté broccoli and onion in oil until broccoli is bright green. Mix in basil, thyme, pepper, and salt.

Top French bread slices with vegetable mixture. Sprinkle cheese on top and broil until melted. Serve immediately.
