Steam zucchini until tender and drain. Sauté onion and carrots in one stick of butter until soft. Mix sour cream with undiluted soup, and add zucchini, carrots, and onions. Stir in 1/2 of the croutons. Put into a buttered 9x13-inch baking dish. Cover with remaining croutons and dot with butter. Preheat oven to 375°. Bake 45 minutes or until golden on top.
