Preheat oven to 425°. Peel and slice apple into 1/4-inch slices and place in a small mixing bowl. Toss with lemon juice, sugar, and cinnamon. In large mixing bowl, combine flour and milk, and mix until just incorporated. Add eggs and mix. Batter should be slightly lumpy.
In skillet, heat butter until foamy. Remove from heat and quickly add batter. Arrange apples in pinwheel design and place in oven. Bake 25 minutes, or until pancake is puffed up and golden brown. Sprinkle with powdered sugar and serve with warm apple sauce, syrup, or jam.
