Add a teaspoon of salt to a pint of new milk, warm from the cow. Stir in flour until it becomes a stiff batter; add great spoonfuls of lively brewer’s yeast; put in a warm place and let it rise as much as it will. When well raised, stir in a teaspoon of saleratus (cream of tartar), stir with batter, and add flour until it becomes a tolerable stiff dough. Knead it thoroughly, set it by the fire until it begins to rise, and then roll out, cut to biscuit form, put it in pans, cover it over with a thick clothe, set by the fire until it rises again, then bake in a quick (400°) oven for about 30 minutes, or until golden brown.
Fun Fact: Residents of Indiana are known as Hoosiers. Although many stories are told, the origin of the term is unknown, but it has been in use since at least 1826. The state of Indiana adopted the nickname "Hoosier State" more than 150 years ago. Today, "Hoosiers" is also the mascot for the Indiana University athletic teams, and the title of an award-winning 1986 movie Hoosiers starring Gene Hackman, based on the story of the Milan High School basketball team and its road to winning the state championship.
