Peach Pudding Coffee Cake

Ingredients

2 cups sliced peaches
lemon juice
cinnamon
3/4 cup sugar
1 teaspoon baking powder
1 cup all-purpose flour
1/2 teaspoon salt
4 tablespoons butter
1/2 cup milk

Topping:
3/4 cup sugar
1 tablespoon cornstarch
1 cup boiling water

Directions:

In an 8-inch square pan, slice peaches. Sprinkle with lemon juice and cinnamon. Combine sugar, baking powder, flour, and salt in mixing bowl. Blend in butter and add milk. Spread this batter on top of peaches. Sprinkle batter with Topping.

Topping:
Sprinkle sugar and cornstarch over batter. Add 1 cup boiling water over top. Do not stir. Bake at 350° for 45 minutes.
