Yield: Serves 4 cowboys on a Friday night or 10 ranch guests on Monday morning
Preheat oven to 450°. Grease a large baking sheet. Sift first 5 ingredients into a bowl. Mix in cheeses. Add shortening and mix with your fingers until mixture resembles coarse meal. Add buttermilk, stirring until dough begins to form. Turn dough onto floured surface and knead gently until smooth, about 8 turns. Roll out dough to about 1 inch thick. Use a biscuit cutter to cut out biscuits. Gather dough scraps and repeat roll out. Cut out biscuits. Put biscuits on baking sheet and bake until golden, about 15 minutes. Serve hot with butter and honey.
