Johnny Cakes

Ingredients

6 eggs
1 (8 1/2-ounce) package corn muffin mix
1 (8-ounce) can whole-kernel corn, drained
1 cup Filling
1 teaspoon cooking oil
1 cup sour cream
1 cup salsa

Filling Suggestions:
1 chopped ham, diced cooked bacon, thinly sliced green onions, mushrooms, red or green pepper, chopped, or a combination of several

Directions:

In a small mixing bowl, beat eggs until foamy, then add unprepared muffin mix until thoroughly blended. Add corn and desired Fillings, blending well. In a large frying pan on medium, heat oil. Spoon about 1/4cup of batter for each cake into hot pan. When bubbles appear at edges, turn over and cook until lightly browned. Serve with sour cream and salsa.
