Preheat oven to 400°. Line muffin tins with paper cups or spray with vegetable oil spray. In a large mixing bowl, combine flour, sugar substitute, baking powder, and salt. In a medium-size mixing bowl, beat eggs well with an electric mixer or a wooden spoon. Stir in milk, mashed potatoes, grated cheese, and melted margarine. Mix well. Add egg mixture to flour mixture and stir just until mixed. Spoon batter into paper lined cups and bake 25 minutes or until firm and lightly browned.
