Heat oven to 350°F. Grease cookie sheets. In large bowl, combine brown sugar, shortening, orange juice, orange peel and eggs mix well. Add flour, baking soda and salt mix well. By hand, stir in oats, nuts and coconut. Drop by rounded teaspoonfuls 2 inches apart onto greased cookie sheets.
Bake at 350°F. for 10 to 12 minutes or until light golden brown. Cool cookies 1 minute remove from cookie sheets.
HIGH ALTITUDE - Above 3,500 feet: Increase flour to 2 1/2 cups. Bake at 375°F. for 9 to 12 minutes.
