1. Preheat the oven to 350°F. In a large baking dish, combine the bread and apples.
2. In a separate bowl, whisk together the milk, eggs, vanilla, cinnamon, and fructose. Add the raisins. Pour the milk mixture over the bread and let stand for 15 minutes so the bread can absorb some of the liquid.
3. Bake for 40 to 45 minutes until the bread pudding is set and firm. Cut into squares and serve warm with whipped topping or low-fat ice cream.
