1. In a medium saucepan, combine the water and gelatin allow to soften for 10 to 15 minutes. Add 1 cup of the cherries, lemon juice, and sugar substitute bring to a boil.
2. Remove from heat and let cool refrigerate until thick and syrupy.
3. Fold in remaining cherries, beaten egg whites, and whipped cream. Spoon into a soufflé dish and refrigerate until set.
