1. In a food processor, combine shortening, cream cheese, and fructose mix until creamy in texture. Add the egg substitute and water mix thoroughly.
2. Sift flour, baking powder, and salt (if desired) together and add to creamed mixture blend well. Shape into a roll about 1-1/2 inches in diameter and refrigerate overnight.
3. Cut into 1 1/2-inch slices and place on ungreased cookie sheets. Bake at 350 degrees for 8 to 10 minutes or until the tops are golden brown. Remove cookies from the oven, and let them cool on racks.
