Prepare cookie mix according to directions and pat out in a sprayed 14-inch pizza pan. Bake and cool. Blend softened cream cheese, sugar, and vanilla. Spread over cooled cookie crust. Arrange fruit over cream cheese layer (use any combination of fresh or drained canned fruit). Glaze with preserves mixed with water. Chill.
Note: If using fruits that brown (such as bananas), dip slices into lemon juice before placing on pizza to keep them from turning brown.
