Mix (whisk) cream cheese with milk until smooth. Spread on baked pie crust with back of teaspoon until entire pie crust is covered. Cut half of the strawberries in half and put in a saucepan with sugar, cornstarch, and water. Cook over medium heat until thickened, adding a few drops of red food coloring. Place remaining strawberries (save a few for garnish) in the pie crust and pour cooled berry mixture over whole berries. Chill. Serve with whipped cream or Cool Whip.
