Cranberry-Glazed Cheese Pie

Ingredients

Crust:
1 1/2 cups graham cracker or cookie crumbs
3 tablespoons sugar
1/3 cup butter, melted

Filling:
1 (3-ounce) package lemon gelatin
1 1/4 cups boiling water
1 (8-ounce) package cream cheese, softened
1 1/2 cups grated apple
1 tablespoon sugar
-----------------------
Topping:
2 teaspoons cornstarch
1 tablespoon sugar
1/2 cup cranberry or cranapple juice
1 apple, thinly sliced

Directions:

Crust:
Combine crumbs, sugar, and butter; mix well. Press into a 9-inch pie plate. Bake at 350° for 10 minutes. Cool.

Filling:
Dissolve gelatin in boiling water; add cream cheese and blend until well mixed. Refrigerate until slightly jelled. Beat again. Mix grated apple with sugar; add to gelatin mixture, blend, and pour into prepared crust. Chill.

Topping:
Mix cornstarch and sugar; add juice and heat, stirring until thickened. Add apple slices and cook until soft. Arrange slices on top of pie, pouring any remaining juice mixture over. Chill.
