Dissolve yeast in warm water with sugar.
Mix flour, butter, salt, and egg. Pour into yeast mixture. Add enough water to make firm, springy bread-like dough.
Knead 15 minutes. Cover with towel or plastic wrap. Place in warm, draft-free area; let rise 30 minutes or longer until doubled in bulk.
Punch down dough. Roll half of dough to 1/4-inch thickness on lightly floured board. Cut into 2-inch squares.
Heat oil to 375°. Stretch squares gently and drop into hot oil. Hold down in oil until dough begins to puff, then turn squares over. Fry only three or four at a time and turn often until golden. Drain on absorbent paper. Repeat with remaining dough. Serve hot with butter and lots of honey.
