Let pie shell chill while you make the filling. Blend eggs, sugar, salt, vanilla and almond. Stir in scalded milk—that is the secret to this pie. Put your prepared crust into oven, which has been preheated to 400°, and let it bake for about 5 minutes. Leave pie pan on oven rack, pour filling into the pastry, then gently move rack into oven. Bake pie at 400° for 25-30 minutes. Test for doneness by inserting a silver knife into center of pie; if it comes out clean, the pie is done. Sprinkle top generously with nutmeg. Set pie on cooling rack for 30 minutes. Chill thoroughly in refrigerator before serving.
To scald milk: heat until milk reaches boiling point, but do not let it boil. When tiny bubbles form around edge of pan, remove from heat. To scald milk in microwave, use temperature probe and heat to 180°.
