Glazed Strawberry Pie

Ingredients

1 1/2 quarts fresh strawberries
1 (9-inch) pie crust, baked, or graham cracker pie crust
1 cup sugar
2 1/2 tablespoons cornstarch
pinch of salt
1/2 cup water
1 tablespoon butter
few drops of red food coloring
whipped cream

Directions:

Wash and hull berries. Put 1 quart of berries into prepared pie crust. Combine sugar, cornstarch and salt in saucepan. Crush remaining 1/2 quart berries and place in saucepan with sugar mixture and water. Bring mixture to a boil, stirring constantly, and cook until thick and clear. Remove from heat; add butter and enough food coloring to make the color pronounced but not too red. Strain glaze and pour carefully over the berries in the pie shell. Cool before serving. Pipe edges around pie with whipped cream.
