Combine sugar, flour, and salt, blending well. Beat the egg yolks slightly and add the buttermilk and cooled melted butter to them. Gradually add buttermilk mixture to the dry ingredients and blend thoroughly. Fold in egg whites. Pour pie filling into pie shell. Sprinkle mace or a grating of nutmeg on top, if desired. Bake at 375° for 45 minutes, or until a silver knife inserted in the center comes out clean.
Editor's Extra: I had a bit too much to fit into my pie shell, so I just put it in a custard cup and baked it alongside the pie. What a treat!
