Gingerbread with Peach Sauce

Ingredients

1 package gingerbread mix
1/2 cup mincemeat

Sauce:
1 (13-ounce) can sliced peaches, drained, reserve syrup
1/4 cup sugar
1 1/2 tablespoons cornstarch
1/4 teaspoon salt
1 tablespoon lemon juice
1/2 teaspoon lemon rind
2 tablespoons butter, melted
1/2 cup mincemeat

Directions:

Cook gingerbread mix with mincemeat as directed on package.

Sauce:
To peach syrup (add water if necessary to make one cup), add sugar, cornstarch, and salt, and cook until clear and thick. Add lemon juice, rind, and butter, then fold in peaches and mincemeat. Serve warm over gingerbread.
