Yield: 3 dozen muffins
Preheat oven to 400°. Beat egg lightly. Stir in buttermilk, orange rind, orange juice, and melted butter. Sift dry ingredients together, add to liquid ingredients, and stir until just mixed. The batter should be lumpy; do not overmix.
Fill greased muffin cups (or use muffin liners) 2/3 full. Bake 20–25 minutes at 400°. Prepare glaze while muffins are baking. Remove muffins from oven. Run knife around edges of muffin cups. While muffins are still warm, prick tops lightly and pour glaze over. Remove from pan when cool.
Orange Glaze:
Combine all ingredients in saucepan; cook and stir until sugar is dissolved. Bring mixture to a soft simmer to make a light syrup.
