Mix beet juice, lemon juice, and Sure-Jell in medium saucepan. Bring to a full boil. Add sugar and gelatin and boil hard for 10 minutes. Ladle into prepared jelly glasses and cover with 1/8 inch melted paraffin.
*Note: To make beet juice, scrub fresh beets and cover with boiling water. Boil until beets are tender. Remove beets and use the water they have been cooked in. Save beets to eat later. (You can have your beets and eat them, too!)
