Sweet and Tangy Beans

Ingredients

3 strips bacon
1 medium apple, peeled, cored, and cut into 1/2-inch pieces
1 medium onion, finely chopped
1 cup golden raisins
1 cup prepared barbecue sauce
3/4 cup packed light brown sugar
3 (16-ounce) cans pinto beans, drained

Directions:

Preheat oven to 350°. Rub the inside of a 2-quart round flameproof casserole with one of the bacon strips to lightly grease, and place the bacon strip in the bottom of the casserole. Cut the remaining 2 bacon strips into 1-inch pieces.

In a large bowl, stir the apple, onion, raisins, barbecue sauce, and sugar until well combined. Stir in the beans. Transfer to the prepared casserole. Top with the bacon pieces.

Cover and bake 30 minutes. Uncover and continue baking until bubbling throughout and the bacon is browned, about 30 more minutes. Serve the beans hot.
