Crowd-Pleasing Casserole

Ingredients

2 cups yellow squash, sliced and cooked
1 onion, chopped (Vidalia preferred)
2 carrots, grated
1 egg, slightly beaten
1/2 stick butter, sliced
1/2 cup mayonnaise
1 tablespoon sugar
1 cup sharp cheddar cheese, grated and divided
1 cup Ritz crackers, crumbled and divided
1 dash cayenne pepper
1 salt and pepper
1 oregano

Directions:

Put well-drained, hot squash in large mixing bowl. Add onion, carrots, egg, butter, mayonnaise, sugar, half of cheese, and half of cracker crumbs. Season with cayenne pepper, salt, pepper, and oregano. Mix all ingredients well. Put into buttered 1 1/2-quart casserole and top with remaining cheese and crumbs. Bake at 350° for 20 minutes.
