Cook bacon until crisp; drain, reserving 2 tablespoons drippings. Crumble bacon and set aside. Cook onion in reserved drippings until tender; stir in spinach. Cook, covered, until tender, 3 to 5 minutes. Remove from heat; stir in sour cream and bacon. Cut tops from tomatoes; remove centers, leaving shells. Drain on paper towels. Salt shells, then fill with spinach mixture. Place in an 8x8-inch baking pan and bake for 20 to 25 minutes at 375°. Top with shredded cheese and bake for 2 to 3 minutes more, until cheese is melted.
Note: This is an elegant accompaniment, especially good with a beef entrée.
