Orange Balls

Ingredients

1 (12-ounce) package vanilla wafer, crushed
1 cup confectioners' sugar
1/4 cup butter, softened to room temperature
1/2 cup frozen orange juice concentrate, thawed
1/2 teaspoon vanilla extract
1 cup chopped pecans

Directions:

Combine crumbs and sugar; blend in butter. Stir in orange concentrate; add vanilla and nuts. Shape mixture into bite-sized balls; shake in plastic bag with additional confectioners’ sugar. Arrange orange balls in single layer on tray; store uncovered overnight in refrigerator. Roll in coconut, if desired.

Editor's Extra: This is one of my mother’s favorite finger food desserts for weddings, teas and showers.

Even Easier: Frozen orange juice can be thawed right in its container with the top metal lid removed. A 6-ounce container takes 30 seconds on high; a 12-ounce container takes 45 seconds.
