1. Slice the onions very thin. Sauté them in the butter until lightly browned. Mix in the flour and cook for 2-3 minutes more. Stir in the beef broth, wine and Cognac. Season to taste with salt and pepper.
2. Gently simmer the soup for 15-20 minutes. Add the Swiss cheese and continue simmering until the cheese melts. Stir frequently while cheese is melting. When serving, sprinkle each serving with additional grated Parmesan Cheese.
