Preheat oven to 450°. Sift flour once before measuring. Then sift together into a large bowl the flour, salt, baking powder, and baking soda. Add butter or shortening and beat about 2 minutes or until mixture is the consistency of coarse meal. Add buttermilk and beat about 1 minute, just enough to mix thoroughly. Be certain to scrape sides of bowl while beating.
Turn out onto a lightly floured board and knead gently by folding over 2 or 3 times, until texture is even. Roll out to 1/2-inch thickness. Dip cutter in flour and cut biscuits. Place on ungreased baking pan and brush with melted butter. Bake 12–15 minutes until golden brown. Makes 12 or more biscuits, depending on cutter size.
