North Idaho Spoon Bread

Ingredients

3 cups milk, scalded
1 cup white cornmeal
1 teaspoon butter or margarine
1 teaspoon sugar
1 teaspoon salt
3 egg yolk, beaten
3 egg whites, stiffly beaten

Directions:

Add scalded milk gradually to cornmeal, and cook 5 minutes, stirring constantly. Add butter or margarine, sugar, and salt. Add beaten egg yolks; beat well, then fold in beaten egg whites. Turn into greased baking dish, and bake at 350° for 45–50 minutes. Serve hot from baking dish with plenty of butter.
