Grease a 9x13-inch pan. Mix ham, potatoes, mushrooms, green peppers, onion, and 1 cup cheese. Spread in pan. Stir milk, baking mix, salt, and eggs together until blended. Pour over potato mixture. Sprinkle with remaining 1 cup cheese. Cover and refrigerate for at least 4 hours, but no longer than 24 hours. Preheat oven to 375°. Bake uncovered for 30–35 minutes. Let stand for 10 minutes before serving.
Fun Fact: Beartooth Highway, a National Forest Scenic Byway in Montana, has been described by the late CBS correspondent Charles Kuralt as "the most beautiful road in America." From its beginning at the border of the Custer National Forest to its terminus near the northeast entrance to Yellowstone National Park, this 69-mile stretch of paradise will take you to the top of the world at 12,000 feet, and through the Custer, Shoshone, and Gallatin national forests. Glaciers are found on the north flank of nearly every mountain peak over 11,500 feet in these mountains.
