Scrumptious Eggs

Ingredients

1 1/2 pounds Monterey Jack cheese, shredded
3/4 pound fresh mushrooms, sliced (or 1 can)
1/2 onion, chopped
1/4 cup margarine
1 or 2 cups cubed ham
7 eggs
1 3/4 cups milk
1/2 cup flour
1 tablespoon parsley or freeze-dried chives
1 teaspoon seasoned salt

Directions:

Place half of cheese in buttered 9x13-inch pan. Sauté mushrooms and onions in margarine until tender. Spread ham over mushrooms and top with rest of cheese. Cover and refrigerate till ready to bake. When ready to bake, beat eggs, milk, flour, parsley, and seasoning. Pour evenly over casserole. Bake 45 minutes at 350°.
