1 pound ground beef
1 egg
1/3 cup onions minced
1 cup crackers crumbs
2 tablespoons barbecue sauce
1 teaspoon salt
Dash black pepper freshly ground
1 onion large, thinly sliced
3 tablespoons butter or margarine
2/3 cup celery sliced
2/3 cup green bell peppers chopped
1/2 pound mushrooms fresh, sliced
1 1/2 cups sharp cheddar cheese shredded
Heat oven to 400° F. Combine meat, egg, minced onion, 3/4 cup cracker crumbs, barbecue sauce, salt and pepper. Press into bottom and sides of 9-inch pie plate and bake for 15 minutes. Remove from oven; drain fat.° Reduce oven temperature to 350° F. Sauté sliced onion in 1 tablespoon butter or margarine; remove and set aside. Sauté celery and green pepper in 1 tablespoon butter or margarine for 3 minutes; add mushrooms and stir-fry for 3 minutes. Layer sautéed onion on top of hot meat shell; add remaining vegetables. Top with cheese. Melt remaining 1 tablespoon butter or margarine and combine with remaining 1/4 cup cracker crumbs; sprinkle over cheese layer. Return to oven and continue baking for 10 minutes.
* To drain fat from meat shell, lightly hold a saucepan lid over meat and pour off fat.
