Shrimp Or Crab Crepes

Serves: 4

   1/2 pound shrimp or crab, cleaned and cooked
   3 tablespoons butter or margarine
   4 green onions thinly sliced
   2 ribs celery thinly sliced
   1/2 cup mushrooms sliced fresh
   3 tablespoons flour
   1/2 teaspoon salt
   Several drops hot pepper sauce
   1 cup half and half
   4 italian tomatoes peeled and thinly sliced
   1 egg yolk
   8 prepared crepes (Ham and Cheese Crepes)
   1 tablespoon butter real, cut into 8 slivers
   1/3 cup parmesan cheese grated


Prepare shrimp or crab; set aside. In medium saucepan, heat 3 tablespoons butter or margarine and add onions, celery, and mushrooms; sauté, stirring until limp. Add flour and stir for 3 minutes. Stir in salt, hot pepper sauce, and half-and-half; simmer, stirring, until thickened. Add tomatoes and continue to cook for 5 minutes. Beat egg yolk and add some of the hot mixture; return to saucepan and cook for 3 minutes, stirring. Stir in shrimp or crab. Fill each of the 8 crepes with about 3 tablespoons filling. Place seam side down in well-greased 7 x 11-inch baking dish. Top each with a sliver of butter and sprinkle with Parmesan cheese. Bake in preheated 375° F oven for 10 minutes or until hot and bubbly.
