Party Turkey Casserole

Serves: 12

   1 pound spaghetti thin, cooked until barely tender
   1 cup parmesan cheese grated
   6 tablespoons sherry
   Salt and freshly ground pepper to taste
   1 tablespoon butter or margarine
   1 cup ham cooked, cut into 1-inch long julienne strips
   3/4 pound mushrooms fresh, thinly sliced
   6 cups turkeys cooked, cut into 1-inch long julienne strips
   Rich Cream Sauce (recipe follows)
   1/4 cup parsley minced fresh
   1/4 cup chives minced fresh
   Rich Cream Sauce:
   6 tablespoons butter or margarine
   6 tablespoons flour
   5 cups half and half
   1 teaspoon salt
   1/2 teaspoon white peppers freshly ground
   1 teaspoon paprika
   4 eggs yolk lightly beaten
   * See note below.


* Melt butter or margarine in medium saucepan; add flour and cook, stirring, for 3 minutes. Add half-and-half; stir over medium heat until sauce has thickened, about 10 minutes. Add salt, pepper, and paprika. Stir 1/2 cup sauce into egg yolks; quickly stir egg yolk mixture into hot sauce. Cook, stirring, for 3 minutes. Drain cooked spaghetti and toss with 1/2 cup Parmesan cheese and 2 tablespoons sherry. Spread spaghetti mixture into greased 9 x 13-inch baking dish; sprinkle lightly with salt and pepper to taste. Heat butter or margarine in large skillet; sauté ham and mushrooms for 5 minutes, turning frequently. In large bowl, mix sautéed ham and mushrooms with turkey strips; toss. Stir into hot Rich Cream Sauce and heat well; stir in remaining 4 tablespoons sherry, parsley, and chives. Taste and correct seasoning, if necessary. Spoon mixture carefully over spaghetti. Sprinkle top with remaining 1/2 cup Parmesan cheese. Bake in preheated 325° F oven for 25 to 30 minutes; brown top quickly under broiler.
