Yield: 60 fortune cookies
In a mixing bowl combine butter and sugar until fluffy. Add vanilla. Then add eggs to mixture, one at a time. Beat well after adding each egg. Then add flour and beat thoroughly. Heat oven to 375°. Grease cookie sheets, then dust lightly with flour. Drop rounded teaspoons of dough at least 2 inches apart on each sheet. Bake 20 minutes and remove. With a wide spatula, loosen each cookie from sheet. Place a folded fortune on each cookie. Gently fold cookies in half with fortune inside. Pinch edges together, then twist in the centers.
Note: While putting a fortune inside each cookie, keep the cookie sheet warm. This will make the cookies easier to work with.
