1 pound shrimp, peeled and deveined
1 1/2 cups flour
2 cups water
3 large brown eggs
3 scallion, chopped
2 carrots, grated
1/2 cup celery, chopped
1 teaspoon garlic, finely chopped
1 teaspoon coriander
1/8 teaspoon cumin
1 tablespoon salt
1/8 teaspoon pepper
Mix flour, water and eggs. Add everything else to batter. Heat 4 cups oil. Drop large spoons of mix in oil to deep fry. Drain and blot excess oil with paper towels.
