1/4 cup butter or margarine
1/4 cup flour
3/4 teaspoon dry mustard
1 cup beer
3/4 teaspoon worcestershire sauce
2 cups cheddar cheese shredded (8 oz.)
4 english muffins split and toasted
8 tomatoes (optional)
In a medium saucepan melt butter or margarine. Stir in flour and mustard. Cook and stir over medium heat for 1 to 2 minutes. Add beer and Worcestershire sauce. Stirring over medium heat, bring to a boil and boil until thickened. Remove from heat.
Blend in cheese. Return to heat. Cook and stir over low heat just to melt cheese (do not boil).
Arrange muffins and optional tomato slices alternately on four plates; pour on sauce.
