Scrub potatoes. Cut in 1/4-inch strips. Place in bowl of cold water. Heat oil in large saucepan on medium high. When heated (drop of water in pan sizzles), carefully place a handful of potatoes strips that have been patted dry. Cook until lightly browned, about 5 to 7 minutes. Drain on paper towels and sprinkle with salt.
NOTE: For a healthier version, lay on baking sheet sprayed with cooking spray. Spray potatoes with cooking spray, sprinkle with seasoned salt and bake at 425°F for 25 to 35 minutes or until tender.
