Sprinkle yeast into 1/2 cup warm water. Let sit for 5 minutes. Combine butter, water and sugar in microwave bowl. Heat until butter is melted and sugar is dissolved. Beat eggs and add to liquid mixture. Mix in salt and 4 cups flour. Beat until smooth. Stir in yeast. Add rest of flour and stir until smooth. Dough will be sticky. Let rise until doubled, about 45 minutes. Mix down. Spray with cooking spray and cover with plastic wrap. Put in refrigerator overnight.* Sprinkle counter lightly with flour and roll dough into a rectangle about 1/4 inch thick. Melt 1/4 cup butter in small bowl. Using a biscuit cutter or a glass rim (4 inches in diameter) cut out rolls. Dip in butter and fold in half. Place on greased baking sheets, leaving about 1/2 inch betwen each roll. Cover with clean dish towel. Let rise 2 to 3 hours or until double. (To speed rising, heat oven to 170°F and turn off. Place rolls in warm oven.) Bake at 350° F for 15 minutes or until golden brown. Remove from oven and immediately brush tops with butter. Makes 2 dozen.
NOTE: If you don't have time to refrigerate dough, add another 1/2 cup flour to dough. Sprinkle counter with flour as needed to prevent dough from sticking. You can also save time by cutting dough into 3 inch squares with a pizza cutter, and rolling up.
