Mix yeast, sugar and salt. Scald milk and shortening and cool until warm to touch. In a bowl beat eggs. Add milk and yeast mixture. Add 3 cups flour and mix well. Add rest of flour and knead 5 minutes. Let rise 1 hour. Roll 1/4-inch thick and cut in squares. Heat 1/2-inch oil in large skillet over medium-high heat. Carefully place dough in hot oil and cook for 2 to 3 minutes until golden brown. With tongs, turn scone over and cook on other side. Lower heat if they brown before center is done.
NOTE: For a healthier version, spray with cooking spray and bake at 400°F for 10 to 15 minutes.
