In a large mixing bowl, dissolve yeast in water. Let stand for 5 minutes. Drain and mash sweel pvtatoes. Add to yeast mixture along with sugar, butter, eggs, salt and 3 cups flour. Beat until smooth. Add enough remaining tlour to form a soft dough. Sprinkle dour on counter and knead for 7 minutes until smooth and elastic. Add more flour if necessary to keep from sticking to surface. Place in an oiled bowl, turning once to grease top. Cover and let rise until doubled, about 1 hour. Punch dough down and divide in thirds. Roll each portion into a 12-inch circle. Cut each into 12 wedges. Brush with butter. Roll up from the wide end and place, pointed end down, 'h -inch apart on greased baking sheet. Cover with dish towel and let rise until doubled. Bake at 350°F for 15 minutes or until bottoms start to brown. Makes 3 dozen.
