1. Mix all ingredients except oil until well blended.
2. Heat oil on griddle or in large skillet until hot. Spread about 1/4 cup batter on griddle for each pancake. Cook on medium-high heat 2 minutes on each side until crispy keep warm. Add more oil to griddle, if necessary. Serve with applesauce if desired.
