Preheat oven to 475° F. Generously grease jelly roll pans with oil, butter or margarine. Scrub potatoes well. With a paring knife (a vegetable peeler slices too thin), peel skins off the potatoes, about 1/8 -inch thick. Place potato pieces in pan, turn to coat both sides, leaving skin-side up. Sprinkle with salt and pepper. Bake for 10 to 12 minutes or until crisp and golden. Serve immediately in a napkin-lined basket.
