1/2 cup tuna flaked cooked or canned tuna, well drained
1/4 cup sour cream
1 egg hard-cooked, chopped
3 tablespoons mayonnaise real
1 teaspoon lemon juice fresh
1 1/2 teaspoons green onions minced
Salt and freshly ground pepper to taste
4 crepes
1 tablespoon butter real, melted
1 tablespoon parmesan cheese grated or Romano cheese
Heat oven to 350° F. Blend together fish, sour cream, egg, mayonnaise, lemon juice, green onion, and salt and pepper to taste. Place 2 tablespoons filling in each crepe; roll and place seam side down in greased 8 x 8-inch baking dish. Brush with melted butter and lightly dust with cheese. Bake for 20 minutes or until heated through. Serve immediately.
